Chickpea Miso is a light variety of miso, rich in umami and full rounded flavor. Made from organic garbanzo beans, medium grain rice, and sea salt. We age our miso with koji (aspergillus oryzae) cultivated on California grown rice, lending a beautiful bouquet of floral, and sweet aromas. It's then blended with cooked chickpeas and sea salt and stored for a minimum of 10 months to age into a beautiful sweet, and complex umami paste.
Chickpea miso pairs incredibly well with vegetables. Try marinading lamb, pork, beef, and other bbq meats with chickpea miso to add a deep umami and full bodied flavor. Add it to your favorite recipes including, soups, stews, dressings, dips, and even baked goods.
