Soy sauce solids (lees) are harvested after being pressed for its liquid shoyu, then smoked over hickory wood, gently dried, and finally blended with sea salt. This seasoning adds smoky umami to dishes with just a pinch.

The perfect seasoning for any dish that you would normally add soy sauce to. Adds a great layer of smoky umami to anything its applied to including meats, fish, sauces, and cures.
