West Coast Koji Sourdough Bread Shoyu is a small batch amino sauce made by new koji fermentation methods and aged for over one year.

This amino sauce is made by combining a base of heavily toasted sourdough bread, organic barley koji, with purified water and sea salt.

The finished shoyu koji is then gracefully aged to develop a complex, balanced sauce that is full of umami, caramelized notes, sweet earthiness, and a deep balanced flavor. Our sauces are made by hand in Southern California.
