Split Green Pea Miso is a sweet, floral, vegetal, and unique variety of miso made from Certified Organic split green peas, medium grain rice, and sea salt. We age our "peaso" with koji (aspergillus oryzae) cultivated on California grown medium grain rice, lending a beautiful bouquet of floral, and sweet aromas. It's then blended with cooked peas and sea salt and stored for a minimum of 4 months to age into a complex, sweet, and nuanced umami paste.
Split Green Pea miso can be used in marinades, sauces, purees, braises, soups, dips, dressings, and pairs well with fresh vegetables. Try it with seafood, beef, and pork to enhance any recipe with sweet umami.
