West Coast Koji Tamari is a small batch artisanal sauce made by new age methods to create a rich complex gluten free soy sauce that is made from fermented and aged miso paste.
This Tamari is made by an ice clarification method using WCK White Miso Paste. Creating a liquid counter-part to our sweet white miso, which is then cold steeped with kombu seaweed to add even more umami and glutamates.
The finished liquid Tamari is a complex, balanced sauce that is bursting with umami, sweetness, caramelization, and depth of flavor. Made by hand in Southern California.
