White Miso is a sweet, lighter variety of miso. Made from organic soybeans, medium grain rice, and sea salt. We age our miso with koji (aspergillus oryzae) cultivated on California grown medium grain rice, lending a beautiful bouquet of floral and sweet aromas. It's then blended with cooked soybeans and sea salt and stored for 3 months to age into a beautiful, sweet, and complex umami paste.
White (shiro) miso pairs very well with seafood, lamb, beef, and pork. Try marinading with white miso to enhance your protein choice with a sweet umami flavor. Add it to your favorite recipes including, soups, stews, dressings, dips, and even baked goods for a deeper, rounded flavor.
